Ingredients

  • 2 cucumbers
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon sesame oil
  • 2 tablespoons lime juice
  • 1 teaspoon soy sauce
  • 1 teaspoon sugar or sweetener
  • 1/2 teaspoon red chili flakes (optional)
  • Salt to taste

Instructions

  1. Peel and slice the cucumbers.
  2. In a large bowl, combine sliced cucumbers, red onion, and cilantro.
  3. In a small bowl, whisk together sesame oil, lime juice, soy sauce, sugar, red chili flakes, and salt until well combined.
  4. Pour the dressing over the salad and toss to coat.
  5. Serve immediately or let it chill in the refrigerator for 15 minutes before serving.

Notes
