Description

A simple, healthy, and quick meal that combines protein-rich quinoa with delicious vegetables.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup broccoli florets
  • 1 cup diced carrots
  • 1 cup sweet potato, diced

Instructions

  1. Combine rinsed quinoa and water or vegetable broth in a medium pot. Bring to a boil, then reduce heat to low and cover. Cook for about 15 minutes or until quinoa is fluffy.
  2. Steam or boil broccoli florets, diced carrots, and sweet potato in a separate pot until tender, about 5-7 minutes.
  3. Fluff the cooked quinoa with a fork and add the steamed vegetables.
  4. Serve in bowls and enjoy!

Notes

Rinse quinoa well to remove bitter saponin. Use broth instead of water for more taste.
