Rice Krispie Christmas Puddings

Delightful and festive Rice Krispie Christmas Puddings that are easy to make and perfect for holiday gatherings.

Ingredients

  • 200 g Milk Chocolate
  • 50 g Unsalted Butter
  • 180 g Mini Marshmallows
  • 100 g Rice Krispies (or Coco Pops)
  • 50 g White Chocolate
  • White Sugarpaste (or Pre-coloured Sugarpaste)
  • Green Food Colour Gel
  • Red Food Colour Gel

Instructions

  1. In a saucepan, gently melt the chocolate and butter over low to medium heat.
  2. Add mini marshmallows and stir until melted and combined, or microwave for 30 seconds until melted.
  3. In a large bowl, add Rice Krispies and pour the marshmallow mixture over the top, stirring until fully coated.
  4. Let the mixture cool slightly, then dampen your hands and roll into pudding balls.
  5. Place the balls on a baking tray lined with parchment and chill in the fridge for 30 minutes.
  6. Melt white chocolate in a heatproof bowl over simmering water or in the microwave, then place in a piping bag.
  7. Colour white sugarpaste with red and green gels; use green for holly leaves and red for berries.
  8. Once chilled, drizzle white chocolate over the puddings and decorate with sugarpaste holly leaves and berries.

Notes

Get creative with decorations! You can switch chocolate flavors or add sprinkles for extra crunch.
