Roasted Pumpkin with Feta & Honey

A delightful dish combining sweet pumpkin, tangy feta, and honey for a unique flavor twist.

  • 1 medium pumpkin, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 100g feta cheese, crumbled
  • 2 tablespoons honey
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the cubed pumpkin with olive oil, salt, and pepper until evenly coated.
  3. Spread the pumpkin on a baking sheet in a single layer.
  4. Roast in the oven for about 25-30 minutes, or until tender and slightly caramelized.
  5. Remove from the oven and drizzle honey over the roasted pumpkin.
  6. Sprinkle feta cheese on top and return to the oven for another 5 minutes.
  7. Garnish with fresh parsley before serving.

Notes

Cut the pumpkin into even cubes for even cooking. Adjust honey for sweetness and consider adding spices like rosemary or thyme for extra flavor.
