- 1 medium pumpkin, peeled and cubed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 100g feta cheese, crumbled
- 2 tablespoons honey
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the cubed pumpkin with olive oil, salt, and pepper until evenly coated.
- Spread the pumpkin on a baking sheet in a single layer.
- Roast in the oven for about 25-30 minutes, or until tender and slightly caramelized.
- Remove from the oven and drizzle honey over the roasted pumpkin.
- Sprinkle feta cheese on top and return to the oven for another 5 minutes.
- Garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven or microwave until heated through.
