Description

Delicious and healthy salmon burgers served with a crunchy and fresh slaw, perfect for any occasion.


Ingredients

  • 1214 ounces cooked salmon
  • 2 eggs
  • 1/2 cup breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 cup chopped fresh herbs (chives, parsley, or dill)
  • A squeeze of lemon juice
  • Olive oil for pan-frying
  • 1 head green cabbage, finely shredded
  • 1 cup plain Greek yogurt
  • 23 tablespoons white distilled vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 cup chopped fresh herbs (chives, parsley, or dill)
  • A drizzle of olive oil

Instructions

  1. Flake the cooked salmon apart with a fork.
  2. In a bowl, combine the salmon with eggs, breadcrumbs, salt, garlic powder, chopped fresh herbs, and lemon juice. Mix thoroughly until well combined. Form the mixture into 3 large or 4 medium-sized patties.
  3. Heat olive oil in a nonstick skillet over medium heat. Add the salmon patties and fry for a few minutes on each side until golden brown and crispy. Transfer to a plate lined with paper towels and sprinkle with a pinch of salt.
  4. In a large bowl, combine finely shredded cabbage, Greek yogurt, vinegar, salt, garlic powder, chopped herbs, and olive oil. Mix until well combined. Adjust seasoning to taste.
  5. Serve warm salmon burgers on a bed of creamy cabbage slaw. Optionally top with extra yogurt, olive oil, and fresh herbs.

Notes

Use canned salmon for a quicker option. Adjust the amount of vinegar in the slaw to your preference.
