Santa Claus Macarons

Delightful festive macarons perfect for celebrating the spirit of Christmas, with a cheerful appearance and delicious flavors.

  • 100 grams Domino® Golden Sugar
  • 4 grams egg white powder (optional)
  • 100 grams egg whites
  • 105 grams almond flour
  • 105 grams Domino® Powdered Sugar
  • 187 grams Domino® Powdered Sugar
  • 1 tbsp meringue powder
  • 4 tbsp water
  • 2 drops black gel food coloring
  • 1 drop yellow gel food coloring
  • 63 grams all-purpose flour
  • 113 grams unsalted butter
  • 50 grams Domino® Golden Sugar
  • 156 grams Domino® Powdered Sugar
  • 1 tsp vanilla extract
  • 1/8 tsp almond extract
  • 0.5 tbsp milk or heavy cream
  • 50 grams desiccated coconut (shredded)

Instructions

  1. Macaron Shells: Mix almond flour and powdered sugar, whip egg whites (adding egg white powder if using) until stiff peaks form. Gradually add sugar and continue whipping until shiny. Fold in dry mixture carefully.
  2. Royal Icing: Mix meringue powder with water and powdered sugar until you have a smooth icing.
  3. Decorate the shells: Pipe macaron batter onto lined baking sheets. Let sit for 30 minutes to form a skin. Bake at 150°C (300°F) for 15-20 minutes. Cool completely.
  4. Sugar Cookie Buttercream: Cream butter with Domino® Golden Sugar and remaining powdered sugar until light and fluffy. Mix in vanilla extract, almond extract, and milk/heavy cream.
  5. Fill the Shells: Pipe sugar cookie buttercream onto half the macaron shells and sandwich with another shell.

Notes

Ensure your egg whites are at room temperature for better volume. Let cookies rest before baking for smooth shells.
