Instructions
- Preheat your oven to 400°F (200°C).
- Cut the eggplant into bite-sized pieces and place them on a baking sheet.
- Drizzle with olive oil and season with salt, pepper, and Italian seasoning if desired.
- Roast in the oven for about 25-30 minutes until the eggplant is tender and slightly golden.
- Remove from the oven and spoon marinara sauce over the roasted eggplant pieces.
- Sprinkle shredded mozzarella cheese on top.
- Return to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
