Delicious Sausage Kale Soup

A comforting one-pot Sausage Kale Soup that’s full of flavor and nutrients, perfect for chilly days.

Ingredients

  • 1 lb Italian sausage (sweet or spicy)
  • 4 cups chopped kale (stems removed)
  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 6 cups low-sodium chicken broth
  • 2 medium potatoes (diced)
  • Salt, pepper, and Italian seasoning to taste

Instructions

  1. In a large pot over medium heat, brown the sausage for about 5-7 minutes. Drain excess fat if necessary.
  2. Add diced onions and sauté for 3-4 minutes until softened. Stir in minced garlic and cook for another 30 seconds.
  3. Add diced potatoes and chicken broth; bring to a boil. Reduce heat to simmer for 15-20 minutes until potatoes are tender.
  4. Stir in kale and cover, cooking for an additional 5 minutes until wilted. Adjust seasoning before serving.

Notes

Serve hot with a sprinkle of Parmesan cheese and crusty bread or a side salad.
