A warm and filling soup that captures the flavors of pizza in a bowl, perfect for weeknight dinners.
Ingredients

- 1 lb Italian sausage
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 1 cup pizza sauce
- 1 tsp Italian seasoning
- 1 tsp oregano
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
- In the same pot, add the chopped onion and sliced mushrooms. Sauté until softened.
- Add minced garlic and cook for another minute.
- Pour in the chicken broth and diced tomatoes. Stir in the pizza sauce, Italian seasoning, and oregano. Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for about 15 minutes.
- Return the cooked sausage to the pot and stir well.
- Serve hot, topped with shredded mozzarella cheese and fresh basil.
Notes
Cool the soup to room temperature before storing. Keep in the fridge for up to 3 days or freeze for up to 2 months.
