Description

A warm and filling soup that captures the flavors of pizza in a bowl, perfect for weeknight dinners.


Ingredients

  • 1 lb Italian sausage
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup pizza sauce
  • 1 tsp Italian seasoning
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
  2. In the same pot, add the chopped onion and sliced mushrooms. Sauté until softened.
  3. Add minced garlic and cook for another minute.
  4. Pour in the chicken broth and diced tomatoes. Stir in the pizza sauce, Italian seasoning, and oregano. Season with salt and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 15 minutes.
  6. Return the cooked sausage to the pot and stir well.
  7. Serve hot, topped with shredded mozzarella cheese and fresh basil.

Notes

Cool the soup to room temperature before storing. Keep in the fridge for up to 3 days or freeze for up to 2 months.
