- 2 cups cooked chicken, shredded
- 1 cup cheddar cheese, shredded
- 1 cup cream cheese
- 4 cups chicken broth
- 1 can beer (optional)
- 1 cup diced onion
- 1 cup diced carrots
- 1 cup diced celery
- 2 cloves garlic, minced
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Combine the chicken broth, shredded chicken, onion, carrots, celery, garlic, and beer in a crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Add the cream cheese and cheddar cheese about 30 minutes before serving, stirring until melted and well combined.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
Notes
For easier prep, use rotisserie chicken. Adjust salt with low-sodium broth as needed.
