Ingredients

  • 1 medium onion, finely diced
  • 2 garlic cloves, minced
  • 1 pound ground lamb or beef
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 tablespoons tomato paste
  • 1 cup beef or chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 1/3 cup whole milk (or heavy cream for extra richness)
  • Salt to taste
  • 1/2 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Prepare the Mashed Potatoes: Place the cubed potatoes in a medium saucepan, cover with water, and add a pinch of salt. Bring to a boil, reduce heat, and simmer until fork-tender (about 15 minutes). Drain and mash with butter and milk until smooth. Add salt to taste. Set aside.
  2. Cook the Meat Filling: Preheat oven to 400°F (200°C). Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until fragrant and translucent. Add ground meat, cooking until browned. Drain excess fat if needed. Stir in carrots, peas, and corn, cooking for 3-4 minutes. Add tomato paste, Worcestershire sauce, thyme, and broth. Stir and simmer until liquid reduces slightly. Season with salt and pepper to taste.
  3. Assemble Shepherd’s Pie: Transfer meat mixture to a baking dish, spreading evenly. Spoon mashed potatoes over meat layer, smoothing with a spatula. Create swirls or peaks with a spoon. Sprinkle cheddar cheese if desired.
  4. Bake: Place baking dish in preheated oven and bake for 20-25 minutes, until topping is golden and slightly crispy. Let cool for 5 minutes before serving.

Notes

Use ground lamb for a classic taste or ground beef if preferred. Make the meat filling a day ahead to save time.
