- 5 slices diced bacon
- 3 pounds boneless beef chuck pieces, cut into 1-inch cubes
- 1 cup red cooking wine
- 2 cups chicken broth
- ½ cup tomato sauce
- ¼ cup soy sauce
- ¼ cup flour
- 3 minced garlic cloves
- 2 tablespoons minced fresh thyme or 2 teaspoons dried thyme
- Salt and freshly ground black pepper, to taste
- 5 medium carrots, sliced
- 1 pound baby potatoes (tri-color variety preferred)
- 8 ounces sliced fresh mushrooms
- Fresh chopped parsley for garnish
Instructions
- In a large skillet over medium-high heat, cook the diced bacon for 5-7 minutes or until crisp. Transfer cooked bacon to the slow cooker.
- Season the beef chuck pieces with salt and pepper, then brown them in the skillet on each side for 2-3 minutes. Transfer browned beef to the slow cooker.
- In the skillet, pour in the red cooking wine, scraping the bottom to release the browned bits, then simmer and reduce slightly.
- Gradually add chicken broth, tomato sauce, and soy sauce, whisking in the flour to thicken the sauce.
- Pour this mixture over the beef and bacon in the slow cooker.
- Add garlic, thyme, carrots, baby potatoes, and mushrooms, stirring to combine.
- Cover and cook on LOW for 8-10 hours or HIGH for 6 hours until the beef is tender.
- Before serving, sprinkle with fresh parsley.
Notes
Serve with a side of crusty bread or over egg noodles. Great for family dinners or special occasions. Can be stored in the refrigerator for up to 3 days or frozen for 3 months.
