Description

Ingredients

  • 1 bunch bok choy
  • 3 tablespoons soy sauce
  • 4 large eggs
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add minced garlic and ginger; sauté until fragrant.
  3. Add chopped bok choy and stir-fry for about 5 minutes until tender.
  4. In a separate bowl, beat the eggs with soy sauce, salt, and pepper.
  5. Pour the egg mixture over the bok choy in the pan, cooking until the eggs are set.
  6. Serve warm.

Notes

Serve hot on its own or with steamed rice. Add some sesame oil or chili oil for an extra kick.
