Ingredients

- 1 bunch bok choy
- 3 tablespoons soy sauce
- 4 large eggs
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- Salt, to taste
- Pepper, to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add minced garlic and ginger; sauté until fragrant.
- Add chopped bok choy and stir-fry for about 5 minutes until tender.
- In a separate bowl, beat the eggs with soy sauce, salt, and pepper.
- Pour the egg mixture over the bok choy in the pan, cooking until the eggs are set.
- Serve warm.
Notes
Serve hot on its own or with steamed rice. Add some sesame oil or chili oil for an extra kick.
