Description

A juicy and flavorful roast chicken prepared using the spatchcock method for even cooking and enhanced flavor.


Ingredients

  • 1 whole chicken
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 lemon, sliced
  • Fresh herbs (thyme or rosemary), optional

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Place the chicken breast-side down on a cutting board.
  3. Use kitchen shears to cut along both sides of the backbone and remove it.
  4. Open the chicken and flatten it by pressing down on the breastbone.
  5. Flip the chicken over and rub it with olive oil, salt, black pepper, paprika, and garlic powder.
  6. Place the lemon slices and fresh herbs on top of the chicken.
  7. Cook in the preheated oven on a baking sheet for about 45-55 minutes, or until the internal temperature reaches 165°F (75°C).
  8. Let it rest for 10-15 minutes before carving and serving.

Notes

Make sure your kitchen shears are sharp for easy cutting. Marinade for a few hours or overnight for added flavor.
