- 1 whole chicken
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 lemon, sliced
- Fresh herbs (thyme or rosemary), optional
Instructions
- Preheat the oven to 450°F (230°C).
- Place the chicken breast-side down on a cutting board.
- Use kitchen shears to cut along both sides of the backbone and remove it.
- Open the chicken and flatten it by pressing down on the breastbone.
- Flip the chicken over and rub it with olive oil, salt, black pepper, paprika, and garlic powder.
- Place the lemon slices and fresh herbs on top of the chicken.
- Cook in the preheated oven on a baking sheet for about 45-55 minutes, or until the internal temperature reaches 165°F (75°C).
- Let it rest for 10-15 minutes before carving and serving.
Notes
Make sure your kitchen shears are sharp for easy cutting. Marinade for a few hours or overnight for added flavor.
