A delightful combination of soft strawberry cake and creamy cheesecake rolled into a beautiful dessert.


Ingredients

  • 2 cups strawberry cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream
  • 1 cup strawberries, diced
  • 1/2 cup strawberry crunch topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Mix the strawberry cake mix, water, vegetable oil, and eggs in a large bowl until well combined.
  3. Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  4. Let the cake cool completely.
  5. Beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  6. Fold in the whipped cream and diced strawberries.
  7. Spread the cheesecake filling over the cooled cake.
  8. Roll the cake tightly from one end to the other and place seam side down.
  9. Slice into pieces and top with strawberry crunch topping before serving.

Notes

Let the cake cool completely before spreading the filling to avoid melting. Chill the roll for 30 minutes before slicing to get neat slices.
