Description
Enjoy warm, soft cinnamon rolls made without sugar, topped with a rich bacon-maple icing.

- 2 cups almond flour
- 1/4 cup coconut flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup erythritol or other sugar substitute
- 1/2 cup unsweetened almond milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 teaspoons cinnamon
- 4 tablespoons melted butter
- 1/4 cup sugar-free maple syrup (for icing)
- 2 tablespoons cooked and crumbled bacon (for icing)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
- In a bowl, mix almond flour, coconut flour, baking powder, salt, and erythritol.
- In another bowl, whisk together almond milk, eggs, and vanilla extract.
- Combine wet and dry ingredients until a dough forms.
- Roll out the dough on a floured surface into a rectangle.
- Spread melted butter over the dough, sprinkle with cinnamon and a bit more erythritol if desired.
- Roll the dough tightly into a cylinder and slice into rolls.
- Place rolls in the prepared baking pan and bake for 15-20 minutes, or until golden brown.
- For the icing, mix sugar-free maple syrup with crumbled bacon and drizzle over warm rolls.
- Serve warm and enjoy!
Notes
Serve these rolls with coffee or tea, and add extra bacon pieces or a dusting of cinnamon on top. They can be stored in the fridge for up to 4 days.
