Description

Enjoy warm, soft cinnamon rolls made without sugar, topped with a rich bacon-maple icing.


Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup erythritol or other sugar substitute
  • 1/2 cup unsweetened almond milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • 4 tablespoons melted butter
  • 1/4 cup sugar-free maple syrup (for icing)
  • 2 tablespoons cooked and crumbled bacon (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a bowl, mix almond flour, coconut flour, baking powder, salt, and erythritol.
  3. In another bowl, whisk together almond milk, eggs, and vanilla extract.
  4. Combine wet and dry ingredients until a dough forms.
  5. Roll out the dough on a floured surface into a rectangle.
  6. Spread melted butter over the dough, sprinkle with cinnamon and a bit more erythritol if desired.
  7. Roll the dough tightly into a cylinder and slice into rolls.
  8. Place rolls in the prepared baking pan and bake for 15-20 minutes, or until golden brown.
  9. For the icing, mix sugar-free maple syrup with crumbled bacon and drizzle over warm rolls.
  10. Serve warm and enjoy!

Notes

Serve these rolls with coffee or tea, and add extra bacon pieces or a dusting of cinnamon on top. They can be stored in the fridge for up to 4 days.
