Description

A quick, tasty dinner that mixes sweet and savory flavors, cooked in one skillet.


Ingredients

  • 1 lb kielbasa, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, onions)
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar or sweetener alternative
  • 2 tbsp apple cider vinegar
  • 1 tbsp cornstarch
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the kielbasa slices and cook until browned.
  3. Add the mixed vegetables and pineapple chunks, and stir until the veggies are tender.
  4. In a bowl, mix the soy sauce, brown sugar, apple cider vinegar, and cornstarch together until smooth.
  5. Pour the sauce over the kielbasa and vegetables, stirring to coat.
  6. Cook for an additional 5-7 minutes until the sauce thickens.
  7. Season with salt and pepper to taste, and serve warm.

Notes

Cool the dish to room temperature, then put it in an airtight container. Store in the fridge for up to 3 days.
