Description

Simple and tasty Swiss Chicken Enchiladas made with shredded chicken, green enchilada sauce, sour cream, and cheese.


Ingredients

  • 2 cups cooked and shredded chicken
  • 8 corn tortillas
  • 1 can green enchilada sauce
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • 1/2 cup chopped onions
  • 1/2 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until softened.
  3. In a mixing bowl, combine shredded chicken, 1/2 cup enchilada sauce, chopped cilantro, salt, and pepper.
  4. Soften tortillas in a microwave or on a hot skillet for easy handling.
  5. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in a greased baking dish.
  6. Pour the remaining enchilada sauce over the rolled tortillas and spread evenly.
  7. Mix sour cream with a bit of water to thin it out, then drizzle it over the top of the enchiladas.
  8. Sprinkle shredded cheese on top.
  9. Bake in the preheated oven for about 25-30 minutes or until the cheese is melted and bubbly.
  10. Let cool for a few minutes before serving, garnished with additional cilantro if desired.

Notes

Warm tortillas to prevent breaking while rolling. Using rotisserie chicken can save time and enhance flavor.
