Description

A quick and flavorful Thai Chicken Stir Fry made with common veggies and a delicious sauce, perfect for busy weeknights.


Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mixed bell peppers, sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon peanut butter
  • 2 tablespoons vegetable oil
  • green onions, sliced (for garnish)
  • cilantro (for garnish)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and ginger and sauté for 30 seconds.
  3. Add the chicken slices and stir-fry until browned and cooked through, about 5-7 minutes.
  4. Add the bell peppers and broccoli, and stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  5. In a small bowl, mix together the soy sauce, fish sauce, and peanut butter. Pour the sauce over the chicken and vegetables, and toss to combine.
  6. Cook for an additional 2 minutes to heat through.
  7. Serve hot, garnished with green onions and cilantro.

Notes

Slice the chicken thin for faster cooking and dry them before cooking for a nice sear. Prep all veggies beforehand as the cooking process is quick.
