A quick and flavorful Thai Chicken Stir Fry made with common veggies and a delicious sauce, perfect for busy weeknights.

- 1 lb chicken breast, sliced
- 2 cups mixed bell peppers, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon peanut butter
- 2 tablespoons vegetable oil
- green onions, sliced (for garnish)
- cilantro (for garnish)
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and ginger and sauté for 30 seconds.
- Add the chicken slices and stir-fry until browned and cooked through, about 5-7 minutes.
- Add the bell peppers and broccoli, and stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, mix together the soy sauce, fish sauce, and peanut butter. Pour the sauce over the chicken and vegetables, and toss to combine.
- Cook for an additional 2 minutes to heat through.
- Serve hot, garnished with green onions and cilantro.
Notes
Slice the chicken thin for faster cooking and dry them before cooking for a nice sear. Prep all veggies beforehand as the cooking process is quick.
