- 1 cup red lentils
- 1 can coconut milk
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon curry powder
- 1 tablespoon soy sauce or tamari for gluten-free
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and grated ginger, and sauté for another minute.
- Stir in the curry powder and cook until fragrant.
- Add the red lentils, vegetable broth, and coconut milk. Bring to a simmer.
- Cook for about 20 minutes or until the lentils are tender.
- Season with soy sauce, salt, and pepper.
- Blend the soup for a smoother texture if desired.
- Serve hot, garnished with fresh cilantro and lime wedges.
Notes
Rinse lentils before cooking, and for extra flavor, add lime before serving. The soup can be made spicier or thinner based on preferences.
