One-Pan Turkey Sausage and Spinach Tortellini

A simple, healthy, and flavorful one-pan dish featuring turkey sausage, spinach, and cheese tortellini.

  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lb hot or sweet turkey sausages, casings removed
  • 1 (24 oz) jar marinara sauce (Classico Four Cheese recommended)
  • 1 (14.5 oz) can diced tomatoes
  • 3/4 cup low-sodium chicken broth
  • 1/2 cup water
  • 1 (20 oz) package refrigerated three cheese tortellini
  • 4 cups packed fresh spinach, roughly chopped
  • 3 Tbsp chopped fresh parsley
  • Freshly ground black pepper, to taste
  • 3 Tbsp chopped fresh basil

Instructions

  1. Heat olive oil in an extra-large skillet or pot over medium-high heat. Add minced garlic and sauté for 30 seconds until fragrant.
  2. Add turkey sausage, breaking it up with a spoon. Cook until fully cooked and browned.
  3. Stir in marinara sauce, diced tomatoes with juices, chicken broth, and water. Bring to a light boil.
  4. Add tortellini, toss to coat, and gently press into the sauce. Reduce heat to medium-low, cover, and simmer for about 10 minutes, stirring halfway through.
  5. Stir in spinach and parsley. Season with black pepper and toss gently to wilt the spinach.
  6. Stir in chopped basil just before serving. Serve warm.

Notes

For extra heat, use hot turkey sausage or add red pepper flakes. You can replace turkey sausage with chicken or go vegetarian. Check cooking times for different tortellini brands.
