Description

Ingredients

  • 1 prime rib roast (about 57 pounds)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 cup beef broth

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a bowl, combine minced garlic, chopped rosemary, olive oil, salt, and pepper to create a rub.
  3. Rub the mixture all over the prime rib roast.
  4. Place the roast in a roasting pan, bone-side down, and add beef broth to the bottom of the pan.
  5. Roast in the preheated oven for 15 minutes to develop a crust.
  6. Reduce the temperature to 325°F (165°C) and continue roasting for about 90 to 120 minutes, or until a meat thermometer reads 130°F (54°C) for medium-rare.
  7. Let the roast rest for at least 20 minutes before slicing.
  8. Slice the roast against the grain and serve with au jus or gravy, alongside sides like roasted vegetables, mashed potatoes, or a green salad.

Notes

Let the roast sit at room temperature for 1 hour before cooking for even cooking. Use a meat thermometer to avoid overcooking. Resting the meat covered with foil keeps juices inside.
