- 1 prime rib roast (about 5–7 pounds)
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 cup beef broth
Instructions
- Preheat your oven to 450°F (230°C).
- In a bowl, combine minced garlic, chopped rosemary, olive oil, salt, and pepper to create a rub.
- Rub the mixture all over the prime rib roast.
- Place the roast in a roasting pan, bone-side down, and add beef broth to the bottom of the pan.
- Roast in the preheated oven for 15 minutes to develop a crust.
- Reduce the temperature to 325°F (165°C) and continue roasting for about 90 to 120 minutes, or until a meat thermometer reads 130°F (54°C) for medium-rare.
- Let the roast rest for at least 20 minutes before slicing.
- Slice the roast against the grain and serve with au jus or gravy, alongside sides like roasted vegetables, mashed potatoes, or a green salad.
Notes
Let the roast sit at room temperature for 1 hour before cooking for even cooking. Use a meat thermometer to avoid overcooking. Resting the meat covered with foil keeps juices inside.
