Description
A simple, tasty bean salad that mixes three kinds of beans with fresh vegetables and a light dressing, perfect for meals or parties.
Ingredients

- 1 can Black beans
- 1 can Kidney beans
- 1 can Chickpeas
- 1 cup Cherry tomatoes, halved
- 1/2 cup Red onion, chopped
- 1 Bell pepper, chopped
- 2 tbsp Olive oil
- 2 tbsp Red wine vinegar
- 1 tsp Garlic powder
- 1 tsp Cumin
- 1 tbsp Lemon juice
Instructions
- Rinse and drain beans.
- Chop veggies.
- Mix dressing ingredients.
- Toss everything together.
- Chill for 30 minutes before serving.
Notes
Rinse beans well to remove can liquid. Cut vegetables into even pieces for better mixing. Taste the dressing and adjust seasoning as needed.
