- 1 lb buche meat
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Corn tortillas
- Toppings: chopped cilantro, diced onions, lime wedges
Instructions
- Clean and cut the buche into small pieces.
- Heat olive oil in a pan and sauté the onion and garlic until softened.
- Add the buche and cook until browned.
- Season with cumin, paprika, salt, and pepper.
- Serve on corn tortillas with your choice of toppings.
Notes
You can simmer the buche beforehand for extra tenderness. Adjust seasoning to taste.
