  • 1 lb buche meat
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Corn tortillas
  • Toppings: chopped cilantro, diced onions, lime wedges

Instructions

  1. Clean and cut the buche into small pieces.
  2. Heat olive oil in a pan and sauté the onion and garlic until softened.
  3. Add the buche and cook until browned.
  4. Season with cumin, paprika, salt, and pepper.
  5. Serve on corn tortillas with your choice of toppings.

Notes

You can simmer the buche beforehand for extra tenderness. Adjust seasoning to taste.
