A delicious and simple dish featuring juicy chicken breasts seasoned with lemon pepper, perfect for a quick, healthy meal.

- 2–4 chicken breasts (washed and dried)
- 2 cups almond meal
- 2 tbsp lemon pepper seasoning
- ½ tsp garlic granules
- ½ tbsp rosemary
- 1 tbsp lemon zest
- ¼ cup lemon juice
- 1 tsp Himalayan pink salt
- 2 large eggs
- 2 tbsp lemon juice
Instructions
- Coat or spray the air fryer basket with oil and set it aside.
- Place the chicken on a chopping board and cover it with cling film. Use a mallet or tenderizer to hit the chicken several times to soften and flatten it.
- Mix all the ingredients for the breading in a large bowl thoroughly.
- Crack the eggs in another medium-sized bowl and beat them to make the egg wash; place this next to the breading.
- Dip one chicken breast at a time in the egg wash, allowing any excess to drip back into the bowl.
- Using your fingers or tongs, pick up the chicken and place it into the breading. Roll the chicken into the breadcrumbs while still holding onto it.
- Shake off any excess crumbs and repeat the process with the remaining chicken.
- Place each piece in the air fryer basket. Drizzle or spray a small amount of oil over the chicken fillets.
- Select the air fryer’s temperature setting at 180°C (356°F) and cook for 14 minutes, turning halfway through.
Notes
For added flavor, consider marinating the chicken in lemon juice and seasonings before cooking.
