Air Fryer Zucchini Fries are a tasty and healthy snack made by coating zucchini strips in a savory breadcrumb mixture and cooking them in an air fryer for a crispy, golden treat.

- 1 whole zucchini
- 1/2 cup breadcrumbs (or substitute with almond flour)
- 1/2 cup grated parmesan cheese
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon onion powder
- 1/8 teaspoon paprika
Instructions
- Cut the zucchini into fry shapes.
- In one bowl, beat the two eggs. Add a little milk to the egg wash if you’d like.
- In another bowl, mix together the breadcrumbs, grated parmesan cheese, and all the seasonings.
- Preheat the air fryer to 400°F (200°C).
- Dip each zucchini fry into the egg wash, then coat it with the breadcrumb mixture. For crispier fries, double dip them back into the egg wash and then the breading.
- Layer the fries in the air fryer basket without overcrowding them. Lightly spray with oil.
- Bake for 7-10 minutes, checking at 7 minutes for browning. The fries are ready when the breading is golden and crispy.
Notes
Ensure the zucchini fries are evenly coated in the breadcrumbs for the best crunch. Experiment with different seasonings and spices to customize the flavor to your liking.
