Ingredients
Scale
- 3–4 very ripe bananas, mashed (with brown spots or nearly black)
- 1 3/4 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/4 cup milk (any kind)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts or pecans (toasted, optional)
Instructions
- Step 1: Preheat Oven & Prep Pan – Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line with parchment paper.
- Step 2: Mash Bananas – In a large bowl, mash the very ripe bananas until mostly smooth, leaving a few small lumps for texture.
- Step 3: Mix Wet Ingredients – Add the melted butter, granulated sugar, brown sugar, eggs, milk, and vanilla extract to the mashed bananas. Whisk until well combined.
- Step 4: Whisk Dry Ingredients – In a separate medium bowl, whisk together the flour, baking soda, and salt until evenly distributed.
- Step 5: Combine Wet & Dry – Gradually add the dry ingredients to the wet ingredients, mixing gently with a spatula until just combined. Avoid overmixing to ensure a tender crumb.
- Step 6: Fold in Nuts – Gently fold in the chopped walnuts or pecans until they are evenly distributed throughout the batter.
- Step 7: Pour into Pan – Pour the prepared batter into your greased and floured (or parchment-lined) loaf pan, spreading it evenly.
- Step 8: Bake – Bake for 50-65 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean. The top should be golden brown.
- Step 9: Cool & Serve – Let the banana bread cool in the loaf pan for 10-15 minutes before carefully inverting it onto a wire rack to cool completely. Slice and enjoy!
Notes
For the best flavor and sweetness, always use bananas that are very ripe, indicated by an abundance of brown spots or an almost black peel. Toasting your chosen nuts (walnuts or pecans) before adding them to the batter significantly deepens their flavor and adds a wonderful complexity to the bread.
