- 2 cups mixed fresh berries (blueberries, strawberries, raspberries)
- 1 package (8 oz) cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Zest of 1 lemon
- Juice of 1 lemon
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- Beat the cream cheese until smooth in a mixing bowl, then add sugar, eggs, and vanilla extract, mixing well.
- Whisk together the flour, baking powder, and salt in another bowl, then gradually add to the cream cheese mixture, mixing until combined.
- Fold in the fresh berries, lemon zest, and lemon juice.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes or until the top is lightly golden and a toothpick inserted into the center comes out clean.
- Allow to cool slightly before dusting with powdered sugar and slicing.
Notes
Make sure your cream cheese is soft for easy mixing. Feel free to experiment with different berries.
