  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. Beat the cream cheese until smooth in a mixing bowl, then add sugar, eggs, and vanilla extract, mixing well.
  3. Whisk together the flour, baking powder, and salt in another bowl, then gradually add to the cream cheese mixture, mixing until combined.
  4. Fold in the fresh berries, lemon zest, and lemon juice.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 30-35 minutes or until the top is lightly golden and a toothpick inserted into the center comes out clean.
  7. Allow to cool slightly before dusting with powdered sugar and slicing.

Notes
