Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent.
  2. Add the carrots, celery, and garlic, cooking for another 5 minutes.
  3. Stir in the zucchini and bell pepper, cooking for another 3-4 minutes.
  4. Add the diced tomatoes, vegetable broth, thyme, bay leaf, salt, and pepper.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for 20-30 minutes.
  6. Remove the bay leaf and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley.
