Description

A delightful breakfast grain salad combining nutritious grains, sweet blueberries, and crunchy hazelnuts, perfect for busy mornings.


Ingredients

  • 1 cup of cooked quinoa or farro
  • 1 cup of fresh blueberries
  • ½ cup of chopped hazelnuts
  • ¼ cup of fresh lemon juice
  • 2 tablespoons of honey or maple syrup
  • 1 tablespoon of olive oil
  • A pinch of salt and pepper to taste
  • Optional: fresh mint leaves for garnishing

Instructions

  1. In a large mixing bowl, combine the cooked quinoa or farro with fresh blueberries.
  2. Add the chopped hazelnuts to the bowl.
  3. In a small bowl, whisk together the lemon juice, honey (or maple syrup), olive oil, salt, and pepper.
  4. Pour the dressing over the grain mixture and gently toss to combine all the ingredients.
  5. Serve immediately or cover and refrigerate for a chilling flavor before serving.
