A refreshing and creamy chilled cranberry soup, perfect for festive occasions.
Ingredients

- 4 cups fresh or frozen cranberries
- 4 cups water
- 1 cup granulated sugar (adjust to taste)
- 1 tablespoon lemon juice
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Fresh mint leaves for garnish (optional)
Instructions
- Combine cranberries and water in a large pot. Bring to a boil over medium heat.
- Reduce heat and let it simmer for about 10-15 minutes, or until the cranberries burst and soften.
- Remove from heat and cool slightly.
- Use a blender or food processor to puree the mixture until smooth.
- Strain the pureed mixture through a fine sieve to remove any pulp or skins.
- Stir in the sugar, lemon juice, and vanilla extract until well combined.
- Let it chill in the refrigerator for at least 120 minutes (or overnight for best results).
- Before serving, fold in the heavy cream until smooth.
Notes
Use fresh cranberries for the best flavor. This soup can be made a day or two in advance. Freeze without cream if needed.
