Ingredients

  • 4 cups fresh or frozen cranberries
  • 4 cups water
  • 1 cup granulated sugar (adjust to taste)
  • 1 tablespoon lemon juice
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Combine cranberries and water in a large pot. Bring to a boil over medium heat.
  2. Reduce heat and let it simmer for about 10-15 minutes, or until the cranberries burst and soften.
  3. Remove from heat and cool slightly.
  4. Use a blender or food processor to puree the mixture until smooth.
  5. Strain the pureed mixture through a fine sieve to remove any pulp or skins.
  6. Stir in the sugar, lemon juice, and vanilla extract until well combined.
  7. Let it chill in the refrigerator for at least 120 minutes (or overnight for best results).
  8. Before serving, fold in the heavy cream until smooth.

Notes

Use fresh cranberries for the best flavor. This soup can be made a day or two in advance. Freeze without cream if needed.
