- 6 ripe tomatoes
- 1 cucumber, peeled and diced
- 1 bell pepper, diced
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a blender, combine the tomatoes, cucumber, bell pepper, red onion, and garlic. Blend until smooth.
- Drizzle in the olive oil and red wine vinegar while blending. Season with salt and pepper to taste.
- Chill the soup in the refrigerator for at least 60 minutes.
- Serve cold, garnished with fresh basil.
Notes
For a spicier kick, add chopped jalapeños or red pepper flakes. Use ripe tomatoes for the best flavor.
