Description

Ingredients

Instructions

  1. In a blender, combine the tomatoes, cucumber, bell pepper, red onion, and garlic. Blend until smooth.
  2. Drizzle in the olive oil and red wine vinegar while blending. Season with salt and pepper to taste.
  3. Chill the soup in the refrigerator for at least 60 minutes.
  4. Serve cold, garnished with fresh basil.

Notes

For a spicier kick, add chopped jalapeños or red pepper flakes. Use ripe tomatoes for the best flavor.
