Ingredients

  • 1 lb Italian sausage
  • 4 slices bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the chopped bacon in a large pot over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add Italian sausage to the pot and cook until browned.
  3. Stir in diced onion and garlic, cooking until the onion is translucent.
  4. Pour in chicken broth and bring to a simmer.
  5. Stir in heavy cream and bring to a gentle simmer.
  6. Add chopped spinach, cherry tomatoes, Italian seasoning, salt, and pepper. Simmer for another 5-10 minutes.
  7. Serve hot, garnished with crispy bacon.

Notes

For added flavor, use homemade chicken broth. You can substitute other greens like kale for spinach and add pasta or rice to make it a complete meal.
