Instructions
- Preheat your oven to 425°F (220°C) or preheat your air fryer.
- Slice the zucchinis into thin strips.
- In a bowl, beat the eggs. In another bowl, mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Dip each zucchini strip in the egg and then coat it with the breadcrumb mixture.
- Place the coated zucchini fries on a baking sheet lined with parchment paper or in the air fryer basket.
- Spray lightly with olive oil.
- Bake for 20-25 minutes or air fry for 10-15 minutes, until golden and crispy.
