Instructions
- In a bowl, combine chocolate cookie crumbs and melted butter until mixed. Press into the bottom of a springform pan to form the crust.
- In a separate bowl, beat cream cheese and powdered sugar until smooth.
- In another bowl, whip the heavy cream until soft peaks form.
- Fold whipped cream into the cream cheese mixture until combined.
- Add melted chocolate chips and vanilla extract, folding gently until well mixed.
- Pour the cheesecake filling over the crust and smooth the top.
- Refrigerate for at least 240 minutes or until set.
- Serve chilled, optionally topped with chocolate shavings or whipped cream.
