- 1 package of mini tortillas
- 1 can of black beans, rinsed and drained
- ½ cup of salsa
- 1 tablespoon of olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Mix the chopped vegetables, black beans, cheese, salsa, and olive oil together in a large bowl.
- Place a tortilla flat on a clean surface and add a scoop of the mixture onto one side.
- Roll the tortilla tightly, and place it seam-side down in a baking dish.
- Repeat this process until you fill the dish with rolled tortillas.
- Bake for about 15-20 minutes until the tortillas are crispy and the cheese is melted.
