- 2 pounds beef tenderloin
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
Instructions
- Preheat the oven to 425°F (220°C).
- Season the beef tenderloin with salt, pepper, minced garlic, rosemary, and thyme. Rub the olive oil all over the meat.
- In a cast iron skillet, sear the beef tenderloin on all sides until browned (about 3-4 minutes per side).
- Once seared, transfer the skillet to the oven and roast for 20-25 minutes, or until desired doneness is reached.
- For the dipping sauce, combine beef broth, Worcestershire sauce, and Dijon mustard in a saucepan. Bring to a simmer and cook for 5-7 minutes until slightly thickened.
- Let the beef rest for 10 minutes before slicing and serve with the dipping sauce.
