Ingredients

  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Season the beef tenderloin with salt, pepper, minced garlic, rosemary, and thyme. Rub the olive oil all over the meat.
  3. In a cast iron skillet, sear the beef tenderloin on all sides until browned (about 3-4 minutes per side).
  4. Once seared, transfer the skillet to the oven and roast for 20-25 minutes, or until desired doneness is reached.
  5. For the dipping sauce, combine beef broth, Worcestershire sauce, and Dijon mustard in a saucepan. Bring to a simmer and cook for 5-7 minutes until slightly thickened.
  6. Let the beef rest for 10 minutes before slicing and serve with the dipping sauce.
