- 12 egg whites
- 1 cup spinach, chopped
- 1 cup bell peppers, diced
- 1/2 cup onion, diced
- 1/2 cup cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- Whisk the egg whites in a large bowl until frothy.
- Stir in chopped spinach, diced bell peppers, diced onion, cheese (if using), salt, and pepper.
- Pour the mixture evenly into the prepared muffin tin.
- Bake for 15-20 minutes, or until muffins are set and lightly golden.
- Let them cool slightly before removing from the tin.
- Serve warm or allow to cool completely and store in the freezer for quick breakfasts.
Notes
For added flavor, experiment with different herbs like basil or oregano. Use silicone muffin cups for easy removal.
