- 12 oz penne pasta
- 1 lb Italian sausage (sweet or spicy)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- Brown the Italian sausage in a large pot over medium heat. Remove from the pot and set aside.
- Add chopped onion and garlic to the same pot, sautéing until soft.
- Add the diced tomatoes, chicken broth, Italian seasoning, and uncooked penne pasta. Stir well and bring to a boil.
- Reduce heat to a simmer, cover, and cook for about 12-15 minutes, until pasta is al dente.
- Stir in the cooked sausage and season with salt and pepper.
- Remove from heat, top with mozzarella cheese, cover until cheese melts.
- Garnish with fresh basil before serving.
Notes
For variation, use spicy sausage for heat or add bell peppers or spinach in step 2 for extra veggies.
