Ingredients

- 1 lb ground turkey
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until translucent.
- Add the ground turkey and cook until browned.
- Stir in the bell pepper, chili powder, cumin, salt, and pepper.
- Add the diced tomatoes, kidney beans, and black beans to the pot.
- Bring to a simmer and cook for about 20-30 minutes, stirring occasionally.
- Serve hot.
Notes
Top with shredded cheese, sour cream, or chopped green onions for added flavor. Great with cornbread or tortilla chips.
