Ingredients

  • 1 lb ground turkey
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until translucent.
  3. Add the ground turkey and cook until browned.
  4. Stir in the bell pepper, chili powder, cumin, salt, and pepper.
  5. Add the diced tomatoes, kidney beans, and black beans to the pot.
  6. Bring to a simmer and cook for about 20-30 minutes, stirring occasionally.
  7. Serve hot.

Notes

Top with shredded cheese, sour cream, or chopped green onions for added flavor. Great with cornbread or tortilla chips.
