A lighter alternative to traditional cheesecake, this Easy Yogurt Cheesecake features creamy Greek yogurt and fresh blueberries for a delicious and healthy dessert.
Ingredients

- 2 cups Greek yogurt
- 1/2 cup cream cheese
- 1/2 cup erythritol or sweetener of choice
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon juice
- 2 cups fresh blueberries
- 1/4 cup unsalted butter (for crust, optional)
- 1 cup crushed almonds or low-carb graham cracker crumbs (for crust, optional)
Instructions
- Preheat the oven to 350°F (175°C). If making a crust, melt the butter and mix it with crushed almonds or graham cracker crumbs. Press this mixture into the bottom of a springform pan and bake for 10 minutes. Let it cool.
- Combine Greek yogurt, cream cheese, erythritol, vanilla extract, and lemon juice in a mixing bowl. Mix until the batter is smooth.
- Pour the cheesecake mixture into the pan over the crust (if using) and smooth the top.
- Bake for 25-30 minutes, or until set.
- Remove from the oven and let it cool, then refrigerate for at least 4 hours or overnight.
- Top with fresh blueberries before serving.
Notes
Make sure all ingredients are at room temperature for a smoother texture. Adjust the sweetener to taste for a sweeter cheesecake.
