Delicious and healthy egg white muffins packed with protein and veggies, perfect for breakfast or snacks.
Ingredients

- 16 ounces Liquid Egg Whites
- 1/2 cup cottage cheese
- 1/2 teaspoon Kosher Salt
- 1/2 teaspoon Black Pepper
- 8 pieces turkey bacon (cooked and crumbled)
- 1/2 cup green onions (chopped)
- 1/4 cup cheddar cheese (shredded)
Instructions
- Preheat the oven to 350°F and position the top rack in the center.
- Place a 12-cup muffin pan on a rimmed baking sheet and spray generously with cooking spray.
- Combine the egg whites, cottage cheese, cheese, salt, and pepper in a blender and blend until smooth.
- Divide the bacon, green onions, and cheddar into the 12 cups of the muffin pan, then pour the egg mixture on top.
- Place the baking sheet with the muffin pan into the oven, adding water to the baking sheet so it’s about halfway full.
- Bake until the muffins are completely set in the center, about 30 minutes.
- Allow to cool for a few minutes before removing. Use a spoon to trace the edges if necessary.
Notes
Store in an airtight container in the refrigerator for up to a week, or freeze for up to three months. Reheat in the microwave for 30 seconds to a minute.
