Description

Delicious and healthy egg white muffins packed with protein and veggies, perfect for breakfast or snacks.


Ingredients

  • 16 ounces Liquid Egg Whites
  • 1/2 cup cottage cheese
  • 1/2 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 8 pieces turkey bacon (cooked and crumbled)
  • 1/2 cup green onions (chopped)
  • 1/4 cup cheddar cheese (shredded)

Instructions

  1. Preheat the oven to 350°F and position the top rack in the center.
  2. Place a 12-cup muffin pan on a rimmed baking sheet and spray generously with cooking spray.
  3. Combine the egg whites, cottage cheese, cheese, salt, and pepper in a blender and blend until smooth.
  4. Divide the bacon, green onions, and cheddar into the 12 cups of the muffin pan, then pour the egg mixture on top.
  5. Place the baking sheet with the muffin pan into the oven, adding water to the baking sheet so it’s about halfway full.
  6. Bake until the muffins are completely set in the center, about 30 minutes.
  7. Allow to cool for a few minutes before removing. Use a spoon to trace the edges if necessary.

Notes

Store in an airtight container in the refrigerator for up to a week, or freeze for up to three months. Reheat in the microwave for 30 seconds to a minute.
