- 8 egg whites
- 1 cup diced vegetables (spinach, bell peppers, onions, etc.)
- 1/2 cup shredded cheese (optional)
- Salt and pepper to taste
- Cooking spray or muffin liners
Instructions
- Preheat the oven to 350°F (175°C).
- Whisk the egg whites in a bowl and season with salt and pepper.
- Grease a muffin tin with cooking spray or line with muffin liners.
- Distribute the diced vegetables evenly among the muffin cups.
- Pour the whisked egg whites over the vegetables, filling each cup about 3/4 full.
- If using cheese, sprinkle it on top of each muffin.
- Bake for 20-25 minutes, or until the muffins are set and lightly golden.
- Allow to cool slightly before removing from the tin.
- Enjoy immediately or store in the refrigerator for meal prep.
Notes
Fresh vegetables enhance flavor; experiment with spices for variety. Muffins can be frozen for longer storage.
