Description

Ingredients

  • 8 egg whites
  • 1 cup diced vegetables (spinach, bell peppers, onions, etc.)
  • 1/2 cup shredded cheese (optional)
  • Salt and pepper to taste
  • Cooking spray or muffin liners

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk the egg whites in a bowl and season with salt and pepper.
  3. Grease a muffin tin with cooking spray or line with muffin liners.
  4. Distribute the diced vegetables evenly among the muffin cups.
  5. Pour the whisked egg whites over the vegetables, filling each cup about 3/4 full.
  6. If using cheese, sprinkle it on top of each muffin.
  7. Bake for 20-25 minutes, or until the muffins are set and lightly golden.
  8. Allow to cool slightly before removing from the tin.
  9. Enjoy immediately or store in the refrigerator for meal prep.

Notes
