- 4 boneless, skinless chicken breasts
- 2 large onions, thinly sliced
- 2 cups broccoli florets
- 1 cup shredded cheese (such as Gruyere or Swiss)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- 1 cup beef or chicken broth
Instructions
- Heat the olive oil over medium heat in a large skillet.
- Add the sliced onions and cook, stirring frequently, until caramelized, about 15-20 minutes.
- Season the chicken breasts with salt, pepper, garlic powder, and thyme.
- Push the onions to the side and add the chicken breasts, cooking for about 5-6 minutes on each side until browned.
- Add the broccoli florets and pour in the broth.
- Cover and simmer for about 5 minutes until the broccoli is tender.
- Sprinkle the shredded cheese on top and cover again until melted, about 2-3 minutes.
- Serve warm and enjoy!
Notes
Serve with rice, mashed potatoes, or crusty bread to soak up the juices. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 2 months.
