Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 2 cups broccoli florets
  • 1 cup shredded cheese (such as Gruyere or Swiss)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1 cup beef or chicken broth

Instructions

  1. Heat the olive oil over medium heat in a large skillet.
  2. Add the sliced onions and cook, stirring frequently, until caramelized, about 15-20 minutes.
  3. Season the chicken breasts with salt, pepper, garlic powder, and thyme.
  4. Push the onions to the side and add the chicken breasts, cooking for about 5-6 minutes on each side until browned.
  5. Add the broccoli florets and pour in the broth.
  6. Cover and simmer for about 5 minutes until the broccoli is tender.
  7. Sprinkle the shredded cheese on top and cover again until melted, about 2-3 minutes.
  8. Serve warm and enjoy!

Notes

Serve with rice, mashed potatoes, or crusty bread to soak up the juices. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 2 months.
