A refreshing and tangy cucumber salad that’s perfect for warm days and family gatherings.
Ingredients

- 2 English cucumbers
- 1/4 small onion (sliced thin)
- 1/4 green bell pepper (sliced thin)
- 1 clove garlic (smashed)
- 1 cup white vinegar
- 2/3 cup cold water
- 4 tablespoons sugar
- 2 teaspoons salt
- 1/2 teaspoon ground black pepper
Instructions
- Peel the cucumbers and slice them very thin.
- Place the cucumber slices in a bowl along with the onion, bell pepper, and garlic.
- Mix together the white vinegar, cold water, sugar, salt, and black pepper in a liquid measuring cup.
- Pour this mixture over the vegetables and stir well.
- Cover the bowl and refrigerate for at least 360 minutes, or preferably overnight, before serving.
Notes
For extra crunch, use fresh cucumbers that are firm. Adjust the seasoning to your taste.
