Ingredients

  • 2 English cucumbers
  • 1/4 small onion (sliced thin)
  • 1/4 green bell pepper (sliced thin)
  • 1 clove garlic (smashed)
  • 1 cup white vinegar
  • 2/3 cup cold water
  • 4 tablespoons sugar
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Peel the cucumbers and slice them very thin.
  2. Place the sliced cucumbers into a bowl with the onion, bell pepper, and garlic.
  3. In a liquid measuring cup, stir together the remaining ingredients to make the dressing.
  4. Pour the dressing over the vegetables and stir to combine.
  5. Cover the bowl and refrigerate for at least 360 minutes, or overnight, before serving.

Notes

For extra crunch, consider adding diced radishes or cherry tomatoes. Feel free to experiment with different types of vinegar.
