A vibrant and hearty Greek Quinoa Salad full of fresh flavors, perfect for meal prep or light meals.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water and drain.
- In a pot, bring water to a boil, add quinoa, cover, and reduce heat to low.
- Cook for about 15 minutes or until quinoa is fluffy and water is absorbed.
- Let it cool.
- In a large bowl, combine cooled quinoa, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, olives, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Refrigerate for at least 30 minutes before serving.
Notes
Store in an airtight container in the refrigerator for up to 5 days. To prevent sogginess, store dressing separately.
