Description

A vibrant and hearty Greek Quinoa Salad full of fresh flavors, perfect for meal prep or light meals.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and drain.
  2. In a pot, bring water to a boil, add quinoa, cover, and reduce heat to low.
  3. Cook for about 15 minutes or until quinoa is fluffy and water is absorbed.
  4. Let it cool.
  5. In a large bowl, combine cooled quinoa, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, olives, and parsley.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour dressing over the salad and toss to combine.
  8. Refrigerate for at least 30 minutes before serving.

Notes

Store in an airtight container in the refrigerator for up to 5 days. To prevent sogginess, store dressing separately.
