Ingredients

- 4 chicken breasts
- 2 ears of corn
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt and pepper.
- Grill the chicken for about 6-7 minutes per side or until fully cooked. Remove from the grill and let it rest.
- While the chicken is grilling, place the corn on the grill and cook for about 10 minutes, turning occasionally, until charred.
- Let the corn cool, then cut the kernels off the cob.
- In a large bowl, combine the diced bell pepper, cucumber, red onion, cilantro, corn, olive oil, lime juice, and salt and pepper.
- Slice the grilled chicken and serve over the corn salad.
Notes
For added flavor, marinate the chicken in lime juice and spices before grilling. This salad can be served as a main dish or as a side.
