Description

A vibrant and refreshing salad combining grilled chicken with sweet, charred corn and crisp vegetables, perfect for any meal.


Ingredients

  • 4 chicken breasts
  • 2 ears of corn
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken for about 6-7 minutes per side or until fully cooked. Remove from the grill and let it rest.
  4. While the chicken is grilling, place the corn on the grill and cook for about 10 minutes, turning occasionally, until charred.
  5. Let the corn cool, then cut the kernels off the cob.
  6. In a large bowl, combine the diced bell pepper, cucumber, red onion, cilantro, corn, olive oil, lime juice, and salt and pepper.
  7. Slice the grilled chicken and serve over the corn salad.

Notes

For added flavor, marinate the chicken in lime juice and spices before grilling. This salad can be served as a main dish or as a side.
