Description

Colorful and flavorful grilled vegetable kabobs that are healthy and easy to prepare, perfect for any meal.


Ingredients

Scale
  • 2 Bell peppers, cut into bite-sized pieces
  • 2 Zucchini, sliced
  • 1 Red onion, cut into chunks
  • 8 Mushrooms, halved
  • 1 cup Cherry tomatoes
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 4 tbsp Fajita butter

Instructions

  1. Preheat the grill to medium-high heat.
  2. Cut the vegetables into bite-sized pieces.
  3. Toss the vegetables with olive oil, salt, and pepper in a bowl.
  4. Thread the veggies onto skewers, alternating colors.
  5. Brush the skewers with fajita butter.
  6. Grill the kabobs for about 10-15 minutes, turning occasionally, until vegetables are tender and nicely charred.
  7. Serve hot as a side dish.

Notes

Soak wooden skewers in water for 30 minutes before using. You can mix and match vegetables based on preference.
