Ingredients

- 2 Bell peppers, cut into bite-sized pieces
- 2 Zucchini, sliced
- 1 Red onion, cut into chunks
- 8 Mushrooms, halved
- 1 cup Cherry tomatoes
- 2 tbsp Olive oil
- 1 tsp Salt
- 1 tsp Pepper
- 4 tbsp Fajita butter
Instructions
- Preheat the grill to medium-high heat.
- Cut the vegetables into bite-sized pieces.
- Toss the vegetables with olive oil, salt, and pepper in a bowl.
- Thread the veggies onto skewers, alternating colors.
- Brush the skewers with fajita butter.
- Grill the kabobs for about 10-15 minutes, turning occasionally, until vegetables are tender and nicely charred.
- Serve hot as a side dish.
Notes
Soak wooden skewers in water for 30 minutes before using. You can mix and match vegetables based on preference.
